Quinoa Salad

Last week my friend and colleague, Shannon brought Quinoa Salad to our Hope Group. It was so yummy AND healthy! I have been excited to try it. I had never bought Quinoa or Edemame beans before so it was a fun new adventure finding them at the grocery store. Our table looks a little lonely. I think its time now that I remembered how to use my kitchen to invite some family and friends over.
To the Quinoa, we added chicken, avocadoes, red onion, corn, black beans, cucumber, cilantro, and edemame beans. 
Thanks, Shannon for inspiring me to make something different.  We will be enjoying this dish again.

I love Quinoa! So much better than rice---though I do love a good brown rice. MMMMMmmmm!

That looks scrumptious! I love quinoa, too, AND it's so fun to say! I've read that it's way more nutritious than rice. And edamame is a favorite in our house, too. We all need reminders of foods that are healthy and taste good!
